Day 2 and 3 – Getting in the flow of the Vitamix!

Today was a bit more of a test keeping to our Vitamix Challenge.  With schedules tightened, it made preparation of unique meals and blends a bit tougher.  Last night while packing up lunches for today, I was however able to blend together 5 separate shakes in under 30 minutes.  I kept the nutritious spinach salad shake the same as seen in our video here.  I blended up a fly by the seat of your pants fruit smoothie, typical of what you’d order up from Booster Juice.  My post morning interval run shake was as follows:

  • 1/2 cup of oatmeal
  • 1/2 cup fresh brewed coffee
  • 1 banana
  • Raw maca powder
  • 1 scoop of vegan protein mix
  • 2 tbs “ish” of almond butter
  • 1 tbs flax seed
  • 2 or so tbs of coconut flakes
  • 1/2 cup homemade rice milk
  • small handful of pumpkin seeds

The final servings of our Raw Sweet Potato Soup has proven the powers of a filling liquid meal to us, as we have struggled to finish them at lunch.  Now for dinner, I will have to say… the cauliflower mashed potatoes that we prepared on day 1… will not make its way into our permanent cookbook, nor will it find its way back into our Vitamix anytime soon.  Not only did the thin texture not quite feel the same as mashed potatoes, but the flavour just didn’t feel right in each and every bite.  Needless to say, thats what this challenge is all about, trial and error!!

UMJ (Ultra Mel and Jon)’s Superblend – makes 2 servings

This one is pretty much a combination of anything and everything that provides an abundance of vitamins and minerals.  The amazing power packed nutritional content of this shake is only one-up’d by the taste!  Will be a staple for us especially during training!Superfood smoothie vitamix blend

  • 1 large handful spinach
  • 1 cup blueberries
  • 1/2 pomegranate
  • 1 cup fresh cranberries
  • 2 tbs chia seeds
  • 3 tbs hemp hearts
  • 2 tbs homemade Ghee
  • 2 spirulina tabs
  • 1/4 cup pumkin seeds
  • Organic orange juice with pulp
  • 1 english cucumber
  • 1 cube of fresh ginger

While day 2 and 3 put our preparation skills to the test, we are becoming accustomed to the almost pure liquid diet and are functioning quite well on less eating sessions per day.  And while we are consuming less calories each day than what we are used to… neither of us are noticing a hit, as the foods we are eating are blended down for easier absorption.  This is a great example of the 80/20 principle, get 80% of the nutrients that your body requires from 20% of your diet.

With three days behind us now, and a few failed or less desirable recipe’s under our belt, we are getting a great feel for what our Vitamix can do!
