Diversity of a Vitamix – Vegan burgers!

So we have experimented with all types of veggie burgers.  Many are simply circles of processed crap, and way too many homemade recipe’s taste like seasoned mushroom sponges.  Today we discovered a winner! One that will likely find its way into a weekly meal lineup.

Vitamix vegan burgers

Beet-utfiul beet burgers!

3 white beets (steamed)
3/4 overcooked quinoa
1/2 cup oats
1/2 cup spelt flour
1/2 onion diced and caramelized
2 tbs soy sauce
Dash of turmeric
Pinch of salt and pepper
Vitamix your beets until these are chopped into small bits.  Add rest of ingredients but hold off on the flour.  Pulse the vitamix to mix and chop this all together.  Pour out ingredients into a bowl and mix in the flour using spoon or hands.  Heat up a pan with a bit of coconut oil and pop them on that till they are lightly browned…enjoy!!
Makes roughly 10 burgers
